I think Instant Pot’s are amazing. On a busy or low-key day, I can make a quick and easy low-calorie breakfast.

When I received my first instant pot as a wedding shower gift, I had no idea what it was. I learned from What Exactly Is an Instant Pot? Here’s What You Need to Know from Good Housekeeping that an Instant Pot can be used for pressure cooking, slow cooking, rice cooking, steaming, warming and sautéing. Basically, it is an all-in-one appliance that helps speed up the cooking process.

I am not going to lie, the first meal I cooked in an Instant Pot really scared me, but it was my lack of knowledge in the way an instant pot works that got me a little nervous. I am not terribly good at reading directions and was not sure what was going to happen when I took the lid off … I was imagining some kind of brief explosion that would end in my climbing on a chair cleaning off the ceiling of the once contents of my instant pot. There was also a brief time where I was not sure if the Instant Pot was on? or if anything was cooking at all. So, I recommend reading the directions to your Instant Pot before starting. I will say that once I got the hang of it, my Instant Pot became one of my favorite kitchen items. But, I was only using my Instant Pot for dinners. Breakfast Burritos are one of my favorite breakfast foods so I was particularly excited to find this excellent low-calorie recipe. These breakfast burritos take a little longer than I have time for in the morning, but they can be frozen and reheated for a quick easy breakfast.

Ingredients

The Egg Base

  • 8 Eggs
  • 1/2 cup Half and Half
  • 1/2 tsp Coarse Salt (or 1/4 tsp table salt)
  • 1/4 tsp Pepper
  • 1/2 tsp Garlic Powder (optional)

Any Combination of These

  • 2 Tbsp Chives, chopped
  • 1/4 cup Onion, diced
  • 1 cup Ham, cooked, cubed (or 3/4 cup sausage or bacon)
  • 3/4 cup Cheese, shredded (I use sharp cheddar)
  • 1/2 cup Red Bell Pepper*, diced

The Main Tools for This Recipe
